Sea cucumber Processing and Handling project

PROCESSING

The sea cucumber species processing activities of. WIN LANKA mainly involves cleaning, evisceration, first boiling, salting, second boiling and drying. This process takes between 5 to 10 days. Some variations in processing steps were observed among species. All sea cucumbers are cleaned before evisceration to remove slime and sand particles on their body. Sea cucumbers are found different species which differs in sizes, shapes and anatomical features. The sea cucumber processing line developed by WIN LANKA team is a success since it improves the productivity of the cleaning activity by reducing dramatically the required time for this processing stage, compared with the entirely manual process and by producing a much higher valued product. Our processors are well equipped and produce good quality beche-de-mer and other seafood from salted sea cucumbers harvested from deep sea. Processing is done by experience skilled processors. Presently there are experienced 25 processors.

HANDLING

should be kept in seawater which needs to be changed every 4 to 8 hours To reduce losses and maximize the product’s market value, handling and holding procedures on the fishing vessel during transport and prior to processing are important. After capture, to prevent quality problems, sea cucumber should be eviscerated and immediately placed in seawater. The holding bins should have smooth walls, be clean (free of dirt and sand particles), and include drainage holes. During transport to processing facilities and storage, the sea cucumbers.
